roasted strawberry margaritas | ahappyfooddance.comSo remember Monday when I told you that I had two martinis and felt like I wanted to die – well it’s Friday and I’ve totally forgotten about that.

Plus I had some strawberries in the fridge that were on their last leg and the best way to revitalize some almost flat-lined fruit is to roast it or drop it in some booze… or in this case both!

roasted strawberry margaritas | ahappyfooddance.comRoasted strawberry margaritas are delicious for two reasons – the roasted strawberries basically make their own simply syrup so you’re using some of the berries natural sugars to sweeten your drink and it pretty much tastes like jam!  Oh and it’s a margarita!  So three!

The roasted strawberry syrup could easily be used in vodka cocktails and gin fizzies, but I just love a good margarita made with fresh lime juice and a salty rim.

roasted strawberry margaritas | ahappyfooddance.comThis cocktail screams summer and the weekend and it’s the perfect way to treat yourself on a Friday (but best believe I’ll be having one on Saturday – and maybe even Sunday too!)

Ingredients
roasted strawberries
  • 16 ounces (1 pound) strawberries, hulled and cut into quarters
  • ¼ cup sugar
margarita
  • 2 ounces tequila
  • 2 ounces roasted strawberries
  • 2 ounces fresh lime juice
  • ½ ounce simple syrup
  • salt or sugar, for rimming
  • lime slices, for garnish
Instructions

  1. Preheat oven to 375 degrees and line a baking sheet with parchment paper.
  2. Place strawberries on baking sheet and then sprinkle with sugar.
  3. Bake for 25 to 30 minutes or until strawberries are fragrant and syrup has formed.

  1. In a shaker, pour tequila and strawberries and muddle together.
  2. Add ice, lime juice and simple syrup to mixture and shake vigorously.
  3. Rim a glass with salt or sugar, fill with ice and strain mixture over top.
  4. Garnish with a lime wedge and serve immediately.
  5. This can also be doubled or quadrupled to make a batch for more people.
